Truffles have been used for centuries especially in the Castell'azzara area. The truffle-seller association of Castell'azzara is doing a truffle map that shows the location of all the different species and is thinking of discipline the truffle harvesting and business.

There is a grand variety of truffle species in our territory, such as: tartufo bianco, Marzuolo, Nero, Scorsone, Uncinato. Castell'Azzara area is the one with the largest truffles' production.
